About Liam Barker:

Liam Barker began his culinary career at London’s Corrigan’s  Mayfair, known for their bold flavors and refined riffs on  traditional British cooking. It was the sister restaurant to the  Michelin Bentleys Oyster Bar & Grill and what ended up being  the perfect opportunity for Liam to gain valuable experience  on the fly. Liam father, Adrian at alearned a lot of his skills  and knowledge on the job here, but always knew that he  wanted to showcase fare and culinary culture he felt  passionately about.

Upon departing Corrigan’s, Liam started his own Caribbean  food pop-up concept showcasing his food, heavily influenced  by Trinidad & Tobago, Barbados and the Colombian coast,  across London and Stockholm. He manages this as well as his  brand @chef.liam, and his latest project 'food education' on  youtube where his goal is to teach how we can all be more  sustainable in our use of food, as well as bridge the gap in  food education.

The menus share a collaborative story, showcasing the diversity and richness of Colombian and Carribean cuisine, featuring staple flavours and dishes such as frijoles and arepas with a modern and progressive twist that reflects the chef's culinary philosophy. Each dish is a fusion of flavours and techniques that highlight the cultural heritage of the chefs, Angelo Gonzalez and Liam Barker who collaboratively create a unique tasting menu that promises to delight and surprise diners.

We are proud to announce the wine pairings will be provided by Justerini & Brooks. Justerini & Brooks, established in 1749, is well-known for being one of the largest importers of fine wines from the top estates of Germany, Burgundy and Barolo and now has exclusivity for Diageo’s rare whisky portfolio, including the Port Ellen and Brora distilleries.  The wine pairings will explore their collection that's dedicated to unearthing and championing young, new talent as well as offering its customers an extensive range of immediate drinking wines.

NOTE: We may not be able to cater for all dietaries as this is a set tasting menu. Please email us if you have any questions before booking your ticket.
